Research Project GREENTECH: Isolation of Plant Extracts for Improved Cheese Quality

Research on the isolation of plant extracts for longer preservation and higher quality production of cheeses is the fundamental premise of the GREENTECH project of the EUREKA program, which brought together scientists from Poland and Serbia at the University of Montenegro, in addition to researchers from the Faculty of Science, Mathematics and Metallurgical Technology of the UCG.

It is about the project "Active substances from supercritical plant extracts for high-quality products with added value" (GREENTECH), within which a seminar was held at the University of Montenegro, from September 14 to 16.

In addition to researchers from the University of Montenegro, the results of their research were presented by colleagues from the Polish research network ŁUKASIEWICZ Research Network-New Chemical Syntheses Institute and PROWANA SP. Z O.O., then from Serbia: Institute for Medicinal and Medicinal Plants Dr. Josif Pančić, Faculty of Technological Metallurgy, University of Belgrade and Faculty of Medicine, University of Niš.

After the discussion, guidelines for further research were determined, and the need for expanding the scientific network and connecting with other institutions and companies was also expressed.

The topic of the GREENTECH project is obtaining standardized, stable plant extracts with concentrated bioactive compounds using conventional and advanced extraction techniques, and their implementation in different types of cheese (produced in Monte Bianco d.o.o., Montenegro) as natural preservatives with strong antioxidant and antimicrobial effects.

"These plant extracts with added value, suitable as natural preservatives for longer preservation of cheeses and prevention from contamination by various bacteria and fungi. This would improve the quality of cheeses, which also affects the health of consumers," explained the coordinator of this project and professor of the Faculty of Science, Svetlana Perović, PhD. The scientists visited the Monte Bianco company after discussions provided for in the seminar program. The Eureka program, within which this project was obtained, is a European network for financing market-oriented research and development projects with the aim of strengthening European competitiveness through support for entrepreneurship, research centers and universities. The intention of this program is to encourage small and medium-sized enterprises to cooperate with international partners in starting research and development and innovation activities, as well as to invest in research and development in order to strengthen their innovative capacity. The program was launched in 1985 in order to improve the competitiveness and innovation of European companies. Montenegro became a full member of the program in 2012, and the Ministry of Science and Technological Development of Montenegro is responsible for cooperation within this program.
